Ingredients for Bhindi Fry Ingredients: Okra (Bhindi) - 1/2 kg Oil - 3 tablespoon Green chillies - 2 Chopped lenthwise Ginger - Finely chopped Onions - Finely sliced Turmeric powder - 1/2 teaspoon Coriander powder - 1/2 teaspoon Amchur powder - 1/2 teaspoon salt to taste
Method for Bhindi Fry:
Pat dry and slice the okra into fine strips lengthwise or cut into rings. Heat the oil in a heavy-based pan and fry the green chillies and ginger till the ginger turns brown. Add the onion slices and fry on medium heat for till the onions are just translucent . Add the turmeric powder, Coriander powder and fry well, add okra stirring gently and briefly on high heat till it is well coated with the oil and looks glossy. Mix in the salt, cover and cook on low heat till the okra is tender and well cooked. Saute gently till the okra is well fried and starts sticking to the bottom of the pan. In last add amchur powder and toss . Enjoy Bhindi Fry with white rice or Roti/Chapati.
