Ingredients for Baigan Bharta:
Baingan (eggplant) - 1 Large Onions - 2 Tomatoes - 2 Garlic cloves - 4 Ginger chopped Oil - 2 tablespoons Salt to taste Cumin seeds - 1/2 teaspoon Coriander powder - 1/2 teaspoon Red Chilli - 1/2 teaspoon Turmeric powder - 1/2 teaspoon Amchur (mango powder) - 1/2 teaspoon Method for Baigan Bharta:
Wash Baingan (eggplant) and brush the skin with oil and roast . Remove the skin of the eggplant . Mash the Baingan (eggplant) with a fork and juices into a pulp. Heat the oil in a pan,add cumin seeds let them splutter. Add onions and salt fry till onions are clear. Add chopped garlic and the chopped tomatoes. Fry together till oil starts to separate . Add coriander powder, red chilli amchur and Turmeric powder. Stir and fry for 2-3 minutes. Add mashed Baingan (eggplant). Stir and sauté on medium heat till oil starts to separate.
