chicken biryani Ingredients: Chicken - 1kg Basmathi rice - 3 cups Onion -1 big size Tomato - 1 Chillies - 5 Garlic - 1 pod Ginger - 1 medium size Black pepper powder - 2 tsp Red Chilli powder - 3 tsp Gram Masala Powder - 1 tsp Cinnamon - 2 Black cardamom - 2 Cloves - 3 Bay leaf - 3 Coriander leaves - 1 small bunch Milk - 1/2 cup Yogurt - 1/2 cup Ghee & Oil - 4 tsp Salt to taste chicken biryani
Method: Clean, wash and and cut chicken into small pieces. Coat the chicken pieces with the yogurt, mix chicken and yoghurt welll, cover and marinate the mixture containing chicken for 2 hrs. Grind garlic, ginger, tomato and corainder bunch (grind separately). In a cooker put the ghee & oil add cinnamon, black cardamom, cloves, bay leaves. Sauté 2-3 minutes, then add finely chopped onions and grinded things sauté until golden brown. Add red chili powder, salt, black pepper powder then sauté one minute. Add marinated chicken, a few pieces at a time, and sauté, turning occasionally, to brown slightly on each side. Once all the chicken has been browned, remove and set chicken aside. In a separate pot, place 6 cups of water, lightly salted, and bring to a boil. Wash the basmati rice. Add the rice to the boiling water. After 5 minutes, check to see if the rice is approx ½ cooked. In a cooker arrange the ½ cooked rice on top of the cooked chicken mixture, put ghee over the rice at even intervals. Add ½ cup of milk to the mixture containing chicken, cover tightly and cook it for 5 min. or until rice is steamed to a perfect cook and fluffy. Garnish with coriander leaves and serve chicken biryani hot with any raita and salads.
