Imli Ki Chutney
Ingredients: 100 g (3 1/2 oz) Tamarind (imli) 200 g (7 oz) Jaggery (gur) 1 1/2 tsp (6 g) Black salt (kala namak) 2 tsp (8 g) Salt 1 1/2 tsp (3 g) Cumin (jeera) seeds, roasted, powdered 4 - 5 Green cardamom (choti elaichi), powdered 1/2 tsp (1 g) Ginger powder (sonth)
Method: 1. Soak the tamarind and jaggery together for 4 - 5 hours. 2. Mash the two thoroughly with a wooden spoon or rub between your palms. Strain through a muslin cloth. 3. Add the remaining ingredients and bring the mixture to the boil, stirring continuously. 4. Cool and preserve. |
