Green Pulao
Ingredients:
Basmathi rice - 1 1/2 cups
Coriander leaves - 1 small bunch
Green chillies - 4 - 5 nos
Ginger(grated) - 1 tbsp
Garlic pods - 2 nos
Onion - 1 no
(cut thin and long)
Capsicum - 1 no
Carrot - 1 no
(shredded)
Butter - 1 tbsp
Oil - 1 tbsp
Salt - As reqd
Cumin seeds - 1 tsp
Curry leaves - A few
Preparation Method
1)Wash and soak rice for 15 - 20 mins.

2)Cut coriander leaves, green chillies, garlic and grind it with ginger into a smooth paste.

3)Heat oil in a pressure pan.

4)Add cumin seeds and curry leaves and allow the cumin seeds to splutter.

5)Add butter and allow it to melt.

6)Add onion and fry for a minute or 2.

7)Add ground paste and stir fry, until the raw smell is gone.

8)Add vegetables and saute for a minute.

9)Add rice and fry till dry.

10)Add 2 3/4cups of water, salt and bring to a boil.

11)Cover and cook upto 1 whistle or for 8 mins after putting the weight whichever is earlier.

12)Transfer the pulao to a serving disha and garnish with coriander leaves.
13)Add cashews, if desired.
